Nestled in Mumbai, Masa Bakery stands as a testament to our unwavering commitment to healthier baking. One of the key principles guiding our bakery is the conscious choice to not use maida in any of our Baked Goods (refined flour).

So, why no maida, you might wonder? Well, our decision to eliminate maida from our recipes was driven by a desire to craft healthier, more wholesome baked goods. Maida, with its intensive processing, ends up stripping away essential nutrients and fiber, often leading to health concerns like diabetes and obesity.

Well, thatā€™s why we make our own flour. Our flour is a clean label, free from GMOs and improvers. Offering twice the nutrients of regular flour, including four times more fiber, four times more manganese, and seven times more vitamin B9. But there's more to it; Masa Flour is a blend of grains and seeds, enhances the flavor and nutritional value of baked goods by adding a rich, wholesome character.

At Masa Bakery, we understand that delight shouldn't come at the cost of guilt. That's why we take pride in our unique baking approach, featuring 80% hydration dough. This high-hydration dough results in bread that's irresistibly crispy on the outside and exceptionally moist and airy on the inside.

Moreover, we believe in the power of locally sourced ingredients. By supporting local farmers and producers, we're doing our part to reduce our carbon footprint, strengthen our community, promote sustainable farming practices, and share our love for baking with the world.
